Here is today's turkey recipe:
Scalloped Turkey Supper:
1 package (4.9 oz) scalloped potatoes
1-3/4 cups boiling water
1 can (10-3/4 oz) condensed cream of chicken soup, undiluted
1/8 teaspoon poultry seasoning
2 cups cubed cooked turkey
1 cup shredded carrots
1/2 cups chopped celery
1/4 cup finely chopped onion
*Place the contents of the sauce mix in a large bowl; set the potatoes aside. Whisk in the water, soup and poultry seasoning. Stir in the turkey, carrots, celery, onion and reserved potatoes
* Transfer to a greased 2-qt baking dish. Bake, uncovered, at 400 degrees for 45-50 minutes or until vegetables are tender.

Taste of Wednesday
With Thanksgiving fast approaching I will bring you some ideas for leftover turkey over the remaining Wednesdays of the month.
Turkey Macaroni Bake:
2 cups cubed cooked turkey
1-1/2 cups uncooked elbow macaroni
2 cups ( 8 oz) shredded cheddar cheese, divided
1 can ( 10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup of milk
1 can (8 oz) mushroom stems and pieces, drained
1/4 teaspoon pepper
*In a large bowl, combine the turkey, macaroni, 1-1/2 cups cheese, soup, milk, mushrooms and pepper. Pour into a greased 2-qt. baking dish.
*Cover and bake at 350 degrees for 60-65 minutes or until macaroni is tender. Uncover; sprinkle with remaining cheese. Bake 5-10minutes longer or until cheese is melted.
